Santa Rosa Valley Salad

Serves 6-8

Dressing:

2 cloves garlic, minced

1 T Dijon mustard

1/2 t salt

1/4 t sugar

1/4 t pepper

1/3 c seasoned rice wine vinegar

1/3 c vegetable oil

Combine dressing ingredients in blender.

1 box long grain and wild rice mix, cooked with
seasonings

juice of 1 lemon

2 or 3 ( I used 2) chicken breast halves, cooked and
diced (I microwaved it in its own juice)

4 green onions chopped

1 red bell pepper diced

3 oz Chinese peapods, ends removed

1 or 2 avocados

1. Mix all salad ingredients except avocado (I let the rice and chicken cool first – I don’t know if you need to)

2. Combine with dressing and refrigerate 2 – 24 hours

3. Before serving add avocados, 1 cup of chopped and toasted pecans (I didn’t use them) Garnish with lettuce leaves if desired

Carol's Quick & Easy Power Breakfast

Directions:

2 (rounded) Tbs Organic Rolled Oats (bulk section @ Whole Foods)

1 (rounded) Tbs Organic Steel Cut Oats (bulk section @ Whole Foods)

A few Organic Raisins (bulk section @ Whole Foods)

Add enough water to cover it well. Cook in microwave 2 minutes.

Add:

1/2 chopped small Organic Chopped Green Apple

2 Tblspns. Grated Carrots

Cook for 30 seconds to 1 min. more.

Add:

Vanilla Protein Powder

Chopped Walnuts

Cinnamon

enough Milk (Soy, Almond, Organic) to get the consistency you want.

Yyyuuuummmeee!

Notes:

Vary the fruit according to the season. I use Herbalife's Vanilla (soy) Protein powder....because it tastes so good. There is probably 25 grams+ protein, lots of fiber and all the good stuff. This takes less than 5 minutes to prepare! My LDL Cholesterol is 75. My HDL is 67.

Fig Bars for the Bike

Cori's recipe for fig bars is adapted from a recipe in the June 2006 Runners World mag submitted by Chef Vitaly Paley. He now markets his bars at www.paleybars.com. They're raw bars and easy to digest, filled with nothing but good ingredients.

Ingredients:

1 1/2 c organic figs, Turkish or black mission

1/2 c organic raisins

1/2 c organic sour cherries or dried cranberries

1 c organic almonds

1/4 c organic honey

1/4 c organic flax seeds

1/4 c organic oat bran

Directions:

Place the first six ingredients in a food processor and pulse just until the batter comes together. Empty the batter onto a sheet of parchment or wax paper sprinkled with oat bran. Press out the mixture with your hands until it is even in height all the way around, into a long log. Wrap tightly and let harden overnight in the fridge. Slice off pieces and put in a baggy for your ride! In the winter, you may want to substitute chocolate chips for the raisins.

4 Alarm Chicken Salad Wraps

Ingredients:

2 half breasts chicken

1 bunch scallions

2 shallots

1 clove garlic

1 large fresh jalapeño (or more if you can take it!)

1 fresh serrano chili

3 roma tomatos

1/2 cup fresh cilantro

1/4 cup fresh mint

1 - 2 tbs plain yogurt (or mayonaise)

Whole wheat wraps or tortillas

Directions:

Grill and shread chicken breasts (you can use canned chicken or a Publix roasted chicken, too). Dice scallions, shallots, peppers, garlic & tomatoes. Chop or process cilantro and mint leaves. Mix in a bowl with yogurt or mayo. Serve on a tortilla.
